Description
This homemade Vegetable Soup is packed with tender potatoes, carrots, celery, green beans, tomatoes, corn, and peas in a savory vegetable broth. Garlic, Italian seasoning, parsley, and fresh lemon juice give every bowl a light, fresh flavor while keeping the soup filling and comforting.
Ingredients
2 tablespoons extra virgin olive oil
1 medium onion, diced
4 medium carrots, peeled and sliced
3 celery ribs, sliced
4 garlic cloves, minced
2 teaspoons Italian seasoning
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 Yukon Gold potatoes, peeled and diced
1 1/2 cups fresh green beans, chopped
2 cans (14.5 ounces each) diced tomatoes
2 bay leaves
6 to 8 cups low-sodium vegetable broth
1 cup frozen corn
1 cup frozen peas
2 to 3 tablespoons fresh lemon juice
1/4 cup fresh parsley, chopped
Instructions
1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, carrots, and celery. Cook for 4 to 5 minutes until they begin to soften.
2. Stir in the garlic, Italian seasoning, salt, and black pepper. Cook for about 30 seconds.
3. Add the potatoes, green beans, diced tomatoes, bay leaves, and vegetable broth. Bring the soup to a boil.
4. Lower the heat, cover the pot, and simmer for about 20 minutes, or until the potatoes are just tender when pierced with a fork.
5. Stir in the frozen corn and peas. Continue cooking for another 5 to 7 minutes.
6. Remove the pot from the heat. Stir in the fresh lemon juice and chopped parsley, then serve warm.
Notes
Use 6 cups of vegetable broth for a thicker, less brothy soup. Use up to 8 cups for a soup with more broth.
For a stronger pepper flavor, add more than 1/2 teaspoon black pepper or add extra when serving.
Cook the onion, carrots, and celery first. Then add the remaining firm fresh vegetables. Add frozen vegetables near the end because they cook faster.
You can use fresh or frozen vegetables depending on what you have available.
Good additions include zucchini, radishes, sweet potatoes, kale, spinach, or frozen green beans.
For extra protein, stir in precooked shredded chicken or beef near the end with the frozen vegetables.
For a plant-based protein option, add lentils or chickpeas earlier so they can cook in the broth.
Use a good-quality vegetable broth because it adds much of the soup’s flavor.
Cool leftovers before placing them in an airtight container. Refrigerate for 4 to 5 days.
Cool the soup completely before freezing. Store it in a freezer-safe container or individual portions for up to 3 months.
Reheat one serving in the microwave for about 1 to 2 minutes until hot. Reheat larger portions in a pot on the stovetop.
