Description
Crisp apples, juicy grapes, crunchy celery, and toasted nuts come together in this easy Waldorf Salad with a creamy, tangy-sweet Greek yogurt and mayonnaise dressing. Ready in just 15 minutes with no cooking required apart from optionally toasting the nuts, it makes a refreshing lunch, side dish, or light meal for four.
Ingredients
3 tablespoons Greek yogurt, dairy or dairy-free
3 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon honey
2 green apples, diced
1 cup celery, diced
1 cup grapes, halved
1 cup whole walnuts or pecans, toasted, cooled, and roughly chopped
2 tablespoons fresh parsley, finely chopped
1/2 teaspoon kosher salt
Optional: butter lettuce leaves for serving
Instructions
1. Combine the Greek yogurt, mayonnaise, lemon juice, and honey in a small bowl to make the creamy dressing.
2. Place the diced apples, celery, halved grapes, cooled toasted nuts, parsley, and salt in a large bowl.
3. Pour the dressing over the salad and mix until all ingredients are evenly coated.
4. Serve immediately as-is or over lettuce leaves.
Notes
Allow toasted nuts to cool completely before mixing them into the salad so their heat does not affect the yogurt-based dressing.
Use a tart, crisp apple such as Granny Smith for the best crunch and flavor.
The salad is best freshly prepared. Refrigerate leftovers in an airtight container for 2 to 3 days.
For advance preparation, prepare the grapes, celery, parsley, toasted nuts, and dressing up to one day ahead and refrigerate them separately. Wait to cut the apples to minimize browning.
You can assemble the full salad about 2 to 3 hours before serving, but making it much earlier can reduce its ideal texture.
You can use all Greek yogurt instead of mayonnaise if desired.
Red or green apples work, although tart green apples provide extra crispness.
Red or green grapes both work well.
You can replace walnuts with pecans, almonds, or pistachios.
Optional additions include dried cranberries, raisins, chopped apricots, or dates.
You can replace the grapes with diced pears.
For a more substantial meal, add cooked chicken or turkey.
Serve the salad alone or over romaine, Bibb, butter lettuce, or other crisp lettuce leaves.
