Description
A refreshing, juicy, and colorful Watermelon Feta Salad with sweet watermelon, blueberries, salty feta, fresh herbs, and a zesty lime honey dressing. Perfect for 4th of July cookouts and summer gatherings.
Ingredients
7 to 8 cups seedless watermelon, cut into ¾-inch cubes
1 ½ cups fresh blueberries
1 cup crumbled feta cheese
Fresh mint leaves, thinly sliced
Fresh basil leaves, thinly sliced
Juice of 1 ½ limes
1 tablespoon extra virgin olive oil
1 to 2 tablespoons honey
Pinch of salt
Instructions
1. Combine lime juice, olive oil, honey, and salt in a jar.
2. Shake until blended, then taste and adjust sweetness or acidity as needed.
3. Add watermelon, blueberries, herbs, and most of the feta to a large bowl.
4. Pour the dressing over the salad.
5. Gently toss until evenly coated.
6. Top with the remaining feta and extra herbs.
7. Serve right away for the best freshness and texture.
Notes
Olive oil can be omitted by increasing the lime juice slightly.
Watermelon and feta can be prepped 1 to 2 days ahead and stored separately.
Dressing can be made up to 3 days in advance.
Cut herbs just before serving for best freshness.
Combine everything only when ready to serve to maintain texture.
Optional additions include arugula, blackberries, cucumber, strawberries, red onions, or pistachios.
