Description

A refreshing Watermelon Fruit Salad with watermelon, strawberries, raspberries, cherries, lime, agave, and mint. Naturally vegan, no cook, and ready in 10 minutes.


Ingredients

4 cups watermelon, cut into 1 inch cubes

1 1/2 cups strawberries, sliced

1 1/2 cups raspberries

1 1/2 cups cherries, pitted and halved

2 tbsp fresh lime juice

1 1/2 tsp lime zest

2 tbsp agave syrup

1 tbsp fresh mint, finely chopped

Extra torn mint for garnish


Instructions

1. Whisk together the lime juice, lime zest, agave syrup, and chopped mint until combined.

2. Add the watermelon, strawberries, raspberries, and cherries to a large bowl.

3. Pour the dressing over the fruit and gently toss until evenly coated.

4. Finish with torn mint before serving.

Notes

Fresh mint can be replaced with basil for a different flavor.

Honey or maple syrup can be used instead of agave syrup.

Serve immediately for the best texture, as the fruit releases liquid over time and can become watery.

A cherry pitter helps speed up prep, but a chopstick can also be used to remove pits.

Optional additions include feta cheese, blueberries, blackberries, mango, pineapple, kiwi, or peaches.
