Watermelon Salsa is a fresh, juicy, sweet, tangy, and mildly spicy no cook salsa made with diced watermelon, cilantro, red onion, jalapeño, and lime juice. Serve it cold with tortilla chips, tacos, grilled chicken, fish, wraps, tofu, lettuce cups, or as a light lunch side.
Ingredients
3 cups diced seedless watermelon
3/4 cup chopped fresh cilantro
1/4 cup finely chopped red onion
1 large jalapeño, seeded and finely chopped
1/4 cup fresh lime juice
Salt to taste
Black pepper, optional
Tortilla chips, for serving
Instructions
1. Combine the watermelon, cilantro, red onion, and jalapeño in a large bowl.
2. Pour in the fresh lime juice.
3. Gently toss everything together until combined.
4. Season with salt and optional black pepper to taste.
5. Serve immediately at room temperature, or chill for 20 to 30 minutes for a colder, more refreshing flavor.
6. Serve with tortilla chips or spoon over tacos, grilled chicken, fish, wraps, tofu, lettuce cups, or salads.
Notes
Use ripe, sweet watermelon for the best flavor and texture.
Remove jalapeño seeds and membranes to reduce heat.
