Description
A quick and refreshing vegan watermelon smoothie made with fresh watermelon, frozen strawberries, frozen bananas, lime, vegan yogurt, and maple syrup. Thick, creamy, sweet, tangy, and ready in 5 minutes.
Ingredients
1 1/2 cups fresh watermelon
2 cups frozen strawberries
2 frozen bananas
Juice and zest of 1/2 lime
2 tbsp vegan yogurt
1 tbsp maple syrup
Instructions
1. Place the watermelon in a high-speed blender first.
2. Add the frozen strawberries, frozen bananas, lime juice, lime zest, vegan yogurt, and maple syrup.
3. Blend until completely smooth, using a tamper if needed to push the frozen fruit toward the blades.
4. Serve immediately in glasses or in a hollowed-out watermelon shell.
Notes
For a thinner smoothie, add water gradually, starting with about 1/4 cup.
For a decorative serving option, use a halved mini watermelon as the bowl.
Frozen zucchini can be substituted for the banana; peel, chop, and freeze it before using.
A high-speed blender is recommended.
The smoothie can be thinned with extra liquid if desired.
