Description
Crunchy, sweet, and savory, this Whole30 Chinese Chicken Salad with Dates is paleo, gluten-free, and full of real-food flavor. Perfect for lunch or dinner.
Ingredients
2 cups cubed cooked chicken (about 2 lbs raw)
4 cups chopped romaine lettuce
1 cup shredded red cabbage
1 cup shredded carrots
1/2 cup sliced almonds
2 Natural Delights® pitted Medjool dates, chopped
2 green onions, chopped
Sesame seeds (optional, for garnish)
**Sesame Dressing:**
2 Natural Delights® pitted Medjool dates
3 tbsp coconut aminos
3 tbsp rice vinegar
2 tbsp extra virgin olive oil
1 tbsp toasted sesame oil
1 garlic clove, peeled
1/2 inch fresh ginger
1/2 tsp ground black pepper
1/4 tsp sea salt
Instructions
1. Add all dressing ingredients to a blender. Let dates soak for a few minutes to soften.
2. Meanwhile, chop all salad ingredients and place in a large bowl.
3. Blend the dressing until smooth and creamy.
4. Pour dressing over the salad and toss until well combined.
5. Sprinkle with sesame seeds, if using, and serve immediately.
Notes
Use rotisserie or leftover chicken to save time.
You can substitute green cabbage for red cabbage.
Cashews work well in place of almonds.
This salad stores best with dressing kept separate until serving.
