Description

15 Minute Greek Pasta is a creamy vegetarian Mediterranean dinner with feta herb sauce, tomatoes, artichoke hearts, olives, and tender pasta. It is quick, family friendly, and perfect for busy weeknights.


Ingredients

16 oz pasta, cooked al dente

1 tbsp olive oil

6 cloves garlic, thinly sliced

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper, to taste

8 oz feta cheese, crumbled

1/2 cup heavy cream

1/2 cup reserved pasta water

1 pint grape tomatoes, halved

1 (15 oz) can quartered artichoke hearts, drained

1 (4.8 oz) jar ripe olives

Fresh chopped parsley, for garnish

Grated Parmesan, for garnish

Extra crumbled feta, for garnish


Instructions

1. Cook pasta until al dente in generously salted water. Reserve 1/2 cup pasta water before draining.

2. Heat olive oil in a large pot over medium heat.

3. Add garlic, oregano, thyme, salt, and pepper. Cook briefly until fragrant.

4. Add feta cheese and heavy cream. Reduce heat and stir until the cheese mostly melts into a creamy sauce.

5. Add cooked pasta and enough reserved pasta water to coat the noodles evenly.

6. Stir in grape tomatoes, artichoke hearts, and olives.

7. Season to taste and cook just until the vegetables warm through.

8. Finish with fresh parsley, grated Parmesan, and extra crumbled feta before serving.

Notes

Salt the pasta water generously before cooking.

Cook pasta only to al dente so it keeps its texture.

Reserve pasta water before draining because the starch helps the sauce cling to the noodles.

Block feta, preferably packed in brine, melts more smoothly and has better flavor than pre-crumbled feta.

Any pasta shape can be used, including fettuccine, spaghetti, penne, rigatoni, macaroni, linguine, or bucatini.

Vegetables can be adjusted to taste.

Sun-dried tomatoes work well in place of grape tomatoes.

If pasta water is unavailable, additional heavy cream can be used, though the sauce will not cling as well.
