Description
Fudgy 4th of July Brownies with hidden patriotic sandwich cookies, colorful sprinkles, and chewy chocolate centers.
Ingredients
1½ cups all-purpose flour
1 cup cocoa powder
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon espresso powder
⅔ cup butter-flavored vegetable shortening
2 cups granulated sugar
4 large eggs
1 cup mini chocolate chips
27 chocolate sandwich cookies
Red gel food coloring
Blue gel food coloring
Decorative sugar or sprinkles
Instructions
1. Preheat oven to 350°F and grease an individual brownie pan or a 9 x 13-inch baking pan.
2. Separate the sandwich cookies and scrape the filling into bowls. Tint portions of the filling red and blue while leaving some white. Transfer fillings into small bags and pipe alternating colored stripes back onto the cookies before reassembling.
3. Whisk together flour, cocoa powder, baking powder, salt, and espresso powder.
4. In a mixer, beat shortening, sugar, and eggs until light and fluffy. Mix in dry ingredients, then stir in chocolate chips.
5. Spoon about 2 tablespoons of batter into each brownie cavity. Press a prepared cookie into the center and cover with additional batter until hidden. Smooth the tops and add sprinkles.
6. Bake for about 15 minutes, or until the tops are set. Cool completely before removing from the pan.
Notes
The brownies have a crunchy exterior with a soft, fudgy center.
This recipe works in both individual brownie pans and standard baking pans.
Different sprinkle and filling colors can be used for holidays, sports themes, or celebrations.
Packaged sandwich cookies and boxed brownie mix can be substituted for quicker preparation.
Extra chocolate cookies can be crushed for toppings or dipped in peanut butter.
Colored sandwich cookies can also be dipped in chocolate instead of baked into brownies.
Brownies stay chewy and travel well because the chocolate is baked inside.
