Description

A bright, tangy, garlicky Greek yogurt marinade with lemon, oregano, olive oil, red wine vinegar, and honey. Perfect for chicken, pork, lamb, beef, seafood, and vegetables.


Ingredients

2 lb meat or vegetables of choice

1 cup plain Greek yogurt

4 garlic cloves, smashed

Zest and juice of 2 lemons

2 tbsp olive oil

2 tbsp red wine vinegar

2 tbsp honey

1 tbsp dried oregano

2 tsp kosher salt

Ground black pepper or crushed red pepper flakes, to taste


Instructions

1. Combine Greek yogurt, garlic, lemon zest and juice, olive oil, red wine vinegar, honey, oregano, salt, and pepper in a bowl or jar. Whisk or shake until smooth and fully mixed.

2. Coat the meat or vegetables evenly with the marinade.

3. Marinate for the recommended time based on the ingredient being used.

4. Grill or cook as desired and serve.

Notes

The marinade can be reserved and used as a dressing for Greek-style salads.

Seafood should marinate for 20 minutes to 1 hour.

Chicken and pork should marinate for at least 6 hours and up to 3 days.

Beef and lamb should marinate for at least 12 hours and up to 3 days.

Vegetables can marinate from 20 minutes up to 5 days.

The marinade can be prepared up to 3 days ahead and refrigerated in an airtight container. Shake or stir before using.
