Ingredients
2 pints fresh cherry tomatoes, halved
1 red onion, thinly sliced
1 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
2 tablespoons fresh basil, finely chopped
Salt and black pepper to taste
Instructions
1. Combine halved cherry tomatoes and sliced onions in a large bowl.
2. Add olive oil and red wine vinegar.
3. Season with salt and black pepper.
4. Mix in chopped fresh basil.
5. Gently toss until evenly coated.
6. Let the salad rest at room temperature for about 1 hour so the flavors develop before serving.
Notes
Use ripe, firm cherry or grape tomatoes for best texture and flavor.
Roma tomatoes can be substituted if cut into quarters.
Fresh herbs such as basil, mint, or oregano work best.
Avoid dried herbs for this recipe.
Pickled red onions can be used for a milder onion flavor.
The salad tastes better after marinating for at least 1 hour.
