Description

Bruschetta Chicken Pasta is a fresh and flavorful chicken pasta recipe with juicy chicken, ripe tomatoes, garlic, balsamic vinegar, basil, mozzarella, and Parmesan. It serves about 4 people and makes an easy weeknight dinner in under an hour.


Ingredients

12 ounces penne pasta

2 tablespoons olive oil

1 pound boneless skinless chicken breasts, cut into bite sized pieces

Salt and black pepper, to taste

3 cloves garlic, minced

4 Roma tomatoes, diced

1/4 cup balsamic vinegar

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes, optional

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, chopped


Instructions

1. Cook pasta in salted boiling water until al dente, then drain.

2. Heat olive oil in a large skillet over medium high heat.

3. Add chicken and season with salt and black pepper.

4. Cook chicken until browned and fully cooked.

5. Remove chicken from the skillet and set aside.

6. In the same skillet, add garlic and cook briefly until fragrant.

7. Add tomatoes, balsamic vinegar, Italian seasoning, and red pepper flakes.

8. Simmer for a few minutes until the sauce slightly reduces.

9. Return chicken to the skillet and mix well.

10. Add cooked pasta and toss everything together.

11. Sprinkle mozzarella and Parmesan over the top.

12. Cover briefly until the cheese melts.

13. Remove from heat and add fresh basil before serving.

Notes

Use fresh ripe tomatoes for the best flavor.

Do not overcook the tomatoes so they keep some texture.

Replace chicken with shrimp, or omit it for a vegetarian option.

Adjust balsamic vinegar to taste for less tanginess.

Fresh basil adds brightness, but you can use a smaller amount of dried basil if needed.

Best served warm.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently with a splash of water or broth if needed.
