8 ounces Neufchatel cheese, cream cheese, or mascarpone

½ cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

2 pounds strawberries, plus extra for garnish

6 ounces blackberries, plus extra for garnish

6 ounces raspberries, plus extra for garnish

1 3.4-ounce package instant vanilla pudding mix

2 cups cold milk

8 ounces Cool Whip or 1 cup whipped heavy cream

Fresh mint leaves, optional


Instructions

1. Whisk the cold milk with the instant vanilla pudding mix for about 2 minutes, then refrigerate for 5 minutes to thicken.

2. Beat the cream cheese with sugar, vanilla extract, and lemon juice until smooth and creamy.

3. Layer half of the angel food cake cubes in the bottom of a trifle dish.

4. Add a layer of mixed berries, followed by half of the cream cheese mixture, then half of the pudding mixture.

5. Repeat the layers once more using the remaining cake, berries, cream cheese mixture, and pudding.

6. Finish with a final berry layer, then spread whipped topping over the center and garnish with extra berries and mint leaves if desired.

7. Serve chilled in dessert bowls or parfait glasses.

Notes

Dry the berries thoroughly before assembling to prevent excess moisture.

The dessert can be prepared a day ahead, but add whipped topping and garnishes just before serving.
