Description

Create this easy Peach Upside-Down Cake with a caramelized brown sugar peach topping and a soft vanilla cake base. Use fresh summer peaches or canned peaches for a cozy homemade dessert ready in just over an hour.

For the peach topping:

6 tablespoons salted butter

2/3 cup packed brown sugar

1/4 teaspoon cinnamon

3 large peaches, peeled and sliced, about 2 cups

For the cake:

1 1/4 cups flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup butter, softened

3/4 cup granulated sugar

1 egg

1 teaspoon vanilla

1/2 cup milk


Instructions

1. Preheat oven to 350°F and grease an 8×8 inch baking dish.

2. Melt the topping butter with brown sugar and cinnamon. Stir until smooth, then spread into the baking dish.

3. Arrange peach slices evenly over the brown sugar mixture.

4. In a separate bowl, whisk together flour, baking powder, and salt.

5. In a large bowl, beat the softened butter until fluffy, then mix in the sugar.

6. Add the egg and vanilla, then blend well.

7. Gradually alternate adding the dry ingredients and milk, mixing only until combined.

8. Spread the batter evenly over the peaches.

9. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.

10. Let the cake rest in the pan for 5 minutes.

11. Loosen the edges, then invert onto a serving plate.

12. Allow to cool for another 10 to 15 minutes before serving warm.

Notes

Fresh or canned peaches may be used.

If using canned peaches, drain well before arranging in the pan.

Best served warm with or without ice cream.

For elevations above 5,000 feet, reduce baking powder slightly, decrease sugar, add extra liquid, increase oven temperature by 25°F, and begin checking for doneness earlier.
